Cheeseburger Eggrolls
1LB 93% fat free ground beef (organic if you can get it)
½ LB ground pork
½ onion, diced
Salt & pepper (garlic, oregano and BAM for more flavor)
1, 18oz. package egg roll wrappers (20 wrappers)
5 slices of American cheese
Yellow mustard, catsup, relish, pickles, thousand island dressing, and whatever else you like on your burger!
1 quart (or more, depending on the size of your pan) grapeseed oil
Directions
Brown the meat and drain off the grease. Add onion and seasonings. Fry until onions are done/translucent. Remove from heat.
Make your eggrolls
On each eggroll wrapper, lay (just off center) ¼ slice of cheese, 2-3 tablespoons of meat mixture, mustard, catsup, relish, etc. Moisten edges with water using your fingers, fold bottom corner up and over filling, fold in each side, then roll up to the top to close.
Heat your grapeseed oil to 380 degrees then, gently slip three or four eggrolls at a time into the pan, turning so they brown evenly. When they are nice and golden, move from oil to a cooling rack lined with paper towels.
Enjoy hot, just as they are, or with your favorite dipping sauce. Freeze leftovers.
