19 Layer Lasagna

19 Layer Lasagna, even the noodles are made from scratch with Kitchen Aid

Combine in mixer bowl:

  • 2 cups of white, unbleached flour
  • Pinch of pink Himalayan, or sea salt

Add:

  • 3 eggs to the mixing bowl, one at a time

Add:

  • 1 teaspoon EVOO

Knead until it comes together on the dough hook. Remove from bowl, dust with flour and wrap with plastic wrap.

Let rest for 30 minutes.

  1. Cut off about a 1 cup piece of dough and shape it into an oblong. Flour generously, then put it through the pasta attachment on speed number two, fold, and repeat two or three times on the largest setting.
  2. Repeat process for each size until you get it down to the thickness that you desire.
  3. Dust with flour between each pass through the pasta maker.
  4. NEVER WASH the pasta roller. Let it sit for and hour then dust it out with a brush.
  5. Boil pasta 2-3 minutes(until it floats) then build your lasagna!

Bechamel Sauce

  • 1 stick of butter
  • 5 Tablespoons of flour
  • Milk
  • Nutmeg

Melt butter, whisk in flour. Add milk until it’s creamy. Add a dash of nutmeg.

Three Cheese Blend

  • 16 ounces of whole milk ricotta cheese
  • 12 ounces of shredded whole milk mozzarella cheese
  • 2 ounces grated parmesan cheese
  • 2 teaspoons of oregano
  • 1 teaspoon garlic powder (not salt)
  • 1 organic egg

Blend together all ingredients.

Tomato sauce (or gravy, if it has meat)

Fresh Roma tomatoes, cooked down and pulverized with a hand blender, and any seasoning you like.

OR any jarred sauce you prefer.

Veggie, meaty filling

  • ½ of a Vidalia onion, diced into a size you prefer
  • ½ of a sweet pepper
  • 1 Italian sausage, casing removed

Sauté diced onions, sweet peppers and crumbled sausage into a pan. Add some of your tomato sauce and cook down for a few minutes.

Construction of layers

  1. Spoon tomato sauce into the bottom of your casserole dish.
  2. Place lasagna noodle (or noodles) to cover the sauce.
  3. Coat noodles with béchamel sauce.
  4. Add a layer of the 3 cheese blend
  5. Dot veggie, meaty sauce over the cheese.
  6. Place lasagna noodle (or noodles).
  7. Coat noodles with béchamel sauce.
  8. Add a layer of the 3 cheese blend
  9. Dot veggie, meaty sauce over the cheese.
  10. Place lasagna noodle (or noodles).
  11. Coat noodles with béchamel sauce.
  12. Add a layer of the 3 cheese blend
  13. Dot veggie, meaty sauce over the cheese.
  14. Place lasagna noodle (or noodles).
  15. Coat noodles with béchamel sauce.
  16. Add a layer of the 3 cheese blend
  17. Dot veggie, meaty sauce over the cheese.
  18. Place lasagna noodle (or noodles).
  19. Top like a pizza with sauce, mozzarella cheese and spices.

Bake at 400 for 30 minutes, or until cheese is golden and bubbly.
