Honey wheat bread – Makes 2 loaves
2 loaves
½ cup warm water
2 tsp active dry yeast
2 tsp sugar
Combine in mixer bowl and let bloom 5 minutes.
½ cup warm water
1 cup white flour
1 T EVOO
1 T softened butter
1 ½ tsp salt
Add to mixer bowl and beat for 5 minutes. Let bloom 10 minutes.
2 T honey
¾ cup plus 2 T cool water
1 egg
2 cups white flour
2 cups whole wheat flour
Add bit by bit to bowl until well blended and the dough lifts from the bowl.
Let rise 30 minutes. Knead and remove from bowl.
Turn out onto floured surface and cut in half. Shape and place each half into a greased and floured loaf pan. Let rise 30 minutes (or more) before baking. Bread should have a nice domed shape before baking.
Preheat oven to 450, then turn down and bake at 350 for 30-40 minutes.
**OPTIONS**
Add 1 T flax seeds and 2 tsp chia seeds for a savory sandwich loaf.
Add 1 T cinnamon, 1 tsp vanilla and 1 cup of raisins for a cinnamon raisin loaf.
