Mama’s Perfect Pancakes

Makes 3-4 servings

  • 3/4 cup whole milk
  • 2 Tablespoons white vinegar
  • 1 cup unbleached all purpose flour
  • 2 Tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 egg
  • 2 Tablespoons melted butter
  • 1 teaspoon pure vanilla extract
  • 100 % Pure Maple Syrup

Directions:

  1. Combine the milk and vinegar and set aside for 10 minutes to make “soured milk”. You will not take the vinegar!
  2. Combine dry ingredients in a large bowl. Whisk together.
  3. Combine the wet ingredients in a small bowl, or pitcher. Whisk together.
  4. Pour wet ingredients into the dry ingredients and whisk until the dry ingredients are just moistened. DO NOT OVER BEAT!
  5. Once combined, allow batter to sit undisturbed for 10 minutes.
  6. After 10 minutes you’ll see bubbles in the batter- do NOT mix again.
  7. gently dip our (don’t pour) 1/2 cup of batter into your buttered frying pan.
  8. Flip when they have risen and are covered with bubbles (about 2 minutes)
  9. Cook for 1 minute more on the second side.
  10. Serve with maple syrup.
