Makes 3-4 servings
- 3/4 cup whole milk
- 2 Tablespoons white vinegar
- 1 cup unbleached all purpose flour
- 2 Tablespoons white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 egg
- 2 Tablespoons melted butter
- 1 teaspoon pure vanilla extract
- 100 % Pure Maple Syrup
Directions:
- Combine the milk and vinegar and set aside for 10 minutes to make “soured milk”. You will not take the vinegar!
- Combine dry ingredients in a large bowl. Whisk together.
- Combine the wet ingredients in a small bowl, or pitcher. Whisk together.
- Pour wet ingredients into the dry ingredients and whisk until the dry ingredients are just moistened. DO NOT OVER BEAT!
- Once combined, allow batter to sit undisturbed for 10 minutes.
- After 10 minutes you’ll see bubbles in the batter- do NOT mix again.
- gently dip our (don’t pour) 1/2 cup of batter into your buttered frying pan.
- Flip when they have risen and are covered with bubbles (about 2 minutes)
- Cook for 1 minute more on the second side.
- Serve with maple syrup.
