Mama’s Wholesome Minestrone Soup

Ingredients:

  • 2 onions, coarsely diced
  • 1 stalk celery, diced
  • 2 cloves garlic, chopped
  • 1 cup green beans
  • 1 cup chopped carrots
  • 1 can (15oz) diced fire roasted tomatoes
  • 1 can (15oz) tomato sauce
  • Beef broth (box)
  • 1cup Ditalini pasta
  • 1 can (15oz) Garbanzo beans
  • 1 can kidney beans
  • 1lb ground beef
  • Oregano
  • Salt
  • Pepper

Frizzle beef.

Add onions, carrots, celery, garlic and spices. Simmer until veggies are soft.

Deglaze pan w/ broth then add tomatoes and tomato sauce. Simmer for an hour.

Add beans and pasta then cover and simmer for 20 minutes.
