Pizza Pockets

Take the dough for one pizza and cut it onto 8 equal sized pieces, smooth them into balls and let them rest for ten minutes.

Filling:

  • 1 cup mozzarella cheese
  • 1 Tablespoon Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 2 ounces pizza sauce
  • 1 egg
  • 1 T Olive Oil

Directions:

  1. In a small bowl, combine mozzarella cheese, parmesan cheese, garlic and oregano with pizza sauce of your choice. Add to this anything you like as a pizza topping! HINT: dice your toppings and lend them into your sauce/cheese mixture.
  2. Pull each dough ball out into 8″ circles, so they look like mini pizzas.
  3. Place a spoonful of your filling mixture on the center of each dough.
  4. Brush the edge of one half of your dough, fold over to seal, then roll the edge to improve the seal.
  5. Air Fryer: Brush entire surface with olive oil and air fry for 7 minutes. 4 minutes on the first side and 3 on the second.
  6. Pan Fry: Pour an inch (or more) oil into a heavy pot and heat over med-high flame until you can fry a drop of water. Gently place pizza pockets, 2 at a time, into the oil and fry for a minute or two on each side.
